Shakshuka

Shakshuka is one of my favourite recipes. Shakshuka is a mixture of veggies and herbs with poached eggs.

Ingredients:

  • 1 medium onion, diced

  • 1 red bell pepper, seeded and diced

  • 4 garlic cloves, finely chopped

  • 2 tsp oregano

  • 1 tsp cumin powder

  • 1/4 tsp cayenne or more

  • 3 to 4 plum tomatoes diced

  • 6 free range organic eggs

  • Sea salt and pepper, to taste

  • 1 small bunch fresh parsley, chopped

  • Crumbled feta (optional)

  • 2 tbsp of avocado oil

Method:

  1. Heat avocado oil in a large sauté pan on medium heat.

  2. Add the chopped bell pepper and onion and cook for 5 minutes or until the onion becomes translucent.

  3. Add garlic and spices and cook an additional minute.

  4. Add chopped tomatoes and juice and break down the tomatoes using a large spoon.

  5. Season with salt and pepper and bring the sauce to a simmer.

  6. Once the sauce is thick and aromatic, use a spatula to make small holes in the sauce.

  7. Crack the eggs into each well.

  8. Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking.

  9. Garnish with more parsley.

  10. Enjoy it with toast and avocado on the side.
