This marinade is AMAZING. It has so many levels of flavours that complement the salmon flavours and textures. It really is a go to recipe for my family and I. A great simple weeknight recipe that will leave you wanting seconds!
Ingredients:
1 cup of coriander leaves
1/2 cup mint leaves
4 cloves garlic
1 inch ginger
4 green chillies
3 tbsp avocado oil
1 tbsp Tandoori masala or curry powder (chemical and additives free)
Sea salt
1 tbsp lemon juice or apple cider vinegar
Method:
Blend all the above ingredients and marinate the fish fillets for 30 mins to 2 hours. (If using for poultry marinate for 2-6 hours)
Grill or broil on high until cooked on both sides. I like to char it a little for extra flavour and texture.
Plate it with colourful veggies on the side and enjoy!
