Jerk Seasoning mix:
Ingredients:
1 tbsp Onion Powder
1 tbsp Garlic Powder
1 tbsp Dried Parsley
1 tbsp Coconut Sugar
2 tsps Smoked Paprika
1 1/2 tsps Cayenne Pepper
1 tsp Ground Allspice
1 1/2 tsps Sea Salt
1 tsp White Pepper
1 tsp Dried Thyme
1/2 tsp Cinnamon
1/2 tsp Red Pepper Flakes
1/2 tsp Nutmeg
Instructions:
Combine all spices into a jar or container with a lid and shake well to combine.
Ingredients:
250 grams Chicken Breast, Cooked (or chicken thighs (boneless))
Marinade:
1 tbsp Jerk Seasoning or as per taste
1 stalk Green Onion (chopped)
1/4 cup Coriander (leaves and stems (washed and chopped))
2 tbsps Lemon Juice
2 tbsps Orange Juice
2 tbsps Coconut Aminos or tamari
1 tsp Paprika (it can be smoked)
Sea Salt & Black Pepper (to taste)
2 cloves Garlic (minced)
1 tbsp Coconut Oil (may need more for basting for grilling)
Instructions:
Blend coriander leaves, green onions, coconut aminos, lemon and orange juice, jerk seasoning, garlic and paprika in to paste. Season with salt and pepper and marinate the chicken overnight.
Grill the chicken on a hot grill or under the broiler in hot oven for 20-25 minutes until slightly charred and cooked.
Enjoy with side of vegetables and couscous.
