Easy Blender Banana Bread

If you are in a hunt for thes best and easiest banana bread recipe, this one will not fail you and it is delicious and nutritious. I am using whole grains for this recipe, so the colour may be a little darker but don't it fool you as it is very moist and soft in texture.





The sweetness comes from the ripened bananas, so no extra sugar needed. It is not super sweet which I personally prefer. If you prefer it a little sweeter, check out the variations.


Ingredients:

  • 1/4 Cup Coconut Oil

  • 2 medium sized eggs

  • 3 very ripe bananas

  • 220 g Sprouted Rye Flour (This can be a mix of Rye and Spelt)

  • 1 tsp Baking soda

  • 1 tsp Baking powder

  • 1 tbsp cinnamon ground

  • Dash of sea salt

  • !/4 cup of coconut sugar (optional)

  • 2 tbsp coconut milk (only if needed)

  • 1/4 cup of walnuts (optional_

  • 1/4 cup dark chocolate chips (optional)

Method:

  • Preheat the oven at 350F/180C

  • Line a bread loaf tin with a parchment paper, I used a 2lb tin

  • Mix all the dry ingredients except for the chocolate chips

  • In your blender, place coconut oil, bananas along with the coconut sugar and blend them till smooth (Add any other sweetener if using at this step)

  • Crack the the 2 eggs and blend them on slow speed.

  • Once mixed well with the banana and the oil, add in the dry ingredients including the walnuts and turn on your blender on a soft speed. Mix the the ingredients with a spatula. If the mixture feels too dense, add coconut milk or any other milk that you use in your kitchen to get the cake batter at a right texture. Add the chocolate chips at this step and mic gently.

  • Pour the mixture into the prepared tin. Shake the tin so the mixture settles and bake for 45-60 minutes or until a toothpick comes out clean if inserted.

  • Let it cool and enjoy!

Variations:

  • Make muffins instead, the baking time may be different

  • Looking for nut free? Do not add nuts or replace the nuts with seeds

  • Is Vegan your lifestyle, replace the eggs with Flax eggs (1 Flax egg= 3 tbsp water+1 tbsp ground Flax, mix and let is sit till it is mucilaginous about 15 minutes)+ 1 tsp baking powder

  • Do you like buttery taste? replace the coconut oil with Ghee

  • No oils? Replace with 1/2 cup of unsweetened applesauce

  • Want a sweeter taste: Add 1/4 cup of maple syrup, or honey. Coconut sugar or unrefined cane sugar or dried fruits
