Blueberry Breakfast Pudding

This breakfast pudding is so delicious and healthy and takes only few minutes of prep. Key is to have a plan and all the wholesome ingredients in your pantry for those busy and hectic mornings!



Ingredients: Serves 1

  • 35 gms Rolled Oats

  • 3/4 cups of Kefir, more if needed

  • 1/4 cup Frozen wild blueberries

  • 1 tbsp Flax oil

  • 1 teaspoon chia seeds

  • Pinch of sea salt

  • 1/4 tsp cardamom powder

  • 1/4 tsp pure vanilla

  • 1 tsp maple syrup (grade 3)

Other essentials:

  • Mason Jar (16 oz) wide mouth

  • Rose petals and Blueberries to garnish

Instructions:

  • Combine all the ingredients in the mason jar.

  • Stir until well combined. Adjust the consistency by adding more kefir if needed.

  • Save a little room on top for blueberries and rose petals for garnish.

  • Refrigerate overnight or 3 to 4 hours.

  • In the morning or when you are ready to eat, stir in the goodness, top it with fresh blueberries and rose petals and Enjoy.

Variations: Replace the fruits with other fruits. I personally do not like to combine fruits but you can go nuts with your favourite fruits. Replace Kefir with milk products (Cows milk, Goat milk, Soy milk, etc) , nut milks or coconut milk. Nuts and seeds can be added for the crunch. Toppings can differ as well, coconut flakes, hemp seeds, dash of cinnamon.
